Apple Oatmeal
Servings: 4
Prep time: 5 minutes Cook time: 10 minutes Total time: 15 minutes
Ingredients:
- 3-4 apples of your choice (I love granny smiths for this recipe)
- 2 tablespoons butter
- 1 tablespoon + 4 teaspoons cinnamon
- 2 cups of oats
- 4 tablespoons brown sugar
- 4x 1/2 teaspoon ginger
Instructions:
- Wash, peel, and slice apples.
- In a saucepan, melt the butter, then add the apple slices.
- Cook apple slices in a low-medium heat until soft, then sprinkle 1 tablespoon of cinnamon over the apples.
- To meal prep: Let the apples cool, then store in an airtight container in the fridge for up to 4 days. When ready to eat, prepare your oatmeal- place 1/2 cup of oats into a bowl, and add just enough water or milk to cover the oats. Microwave for 2 minutes, then add a pinch of salt, a teaspoon of cinnamon, a 1/2 teaspoon of ginger, and 1 tablespoon of brown sugar. Stir to combine, then add 1/4 of the apples. Microwave for 15 seconds to warm the apples through, then enjoy!
