Baked Apple Oatmeal
Prep Time: 5 min Cook Time: 25 min Total Time: 30 min
Ingredients:
- 3 apples (I've tried all kinds of apples and I like granny smith, envy, gala and honey crisp in this, but any kind works.)
- 2 cups old fashioned rolled oats
- 1 cup milk
- 2 eggs
- 1 teaspoon vanilla extract
- 1 scoop (1/4 cup) protein powder (optional- I use vanilla flavored)
- 1/4 teaspoon salt
- 1 tablespoon cinnamon (I usually add in a few extra shakes for good measure)
Instructions:
- Preheat your oven to 375 degrees.
- Wash your apples and cut into small cubes.
- Into a medium sized bowl, combine the oats, milk, eggs, vanilla, protein powder (if using), salt, and cinnamon. Stir to combine.
- Add chopped apples into oat mixture and gently mix in the apples.
- Spray an 8x8 baking dish with non-stick spray, then pour in your oat mixture.
- Bake for 25 minutes or until golden brown.
- To meal prep: let cool, then divide into 4-5 containers. I like to add in about 1/4 cup of milk to each container, so that when I reheat in the microwave (for 1-2 min), I get an oatmeal like texture, otherwise the end result will be a bit drier than regular oatmeal.
