Baked Apple Oatmeal

Prep Time: 5 min Cook Time: 25 min Total Time: 30 min

Ingredients:

  1. 3 apples (I've tried all kinds of apples and I like granny smith, envy, gala and honey crisp in this, but any kind works.)
  2. 2 cups old fashioned rolled oats
  3. 1 cup milk
  4. 2 eggs
  5. 1 teaspoon vanilla extract
  6. 1 scoop (1/4 cup) protein powder (optional- I use vanilla flavored)
  7. 1/4 teaspoon salt
  8. 1 tablespoon cinnamon (I usually add in a few extra shakes for good measure)

Instructions:

  1. Preheat your oven to 375 degrees.
  2. Wash your apples and cut into small cubes.
  3. Into a medium sized bowl, combine the oats, milk, eggs, vanilla, protein powder (if using), salt, and cinnamon. Stir to combine.
  4. Add chopped apples into oat mixture and gently mix in the apples.
  5. Spray an 8x8 baking dish with non-stick spray, then pour in your oat mixture.
  6. Bake for 25 minutes or until golden brown.
  7. To meal prep: let cool, then divide into 4-5 containers. I like to add in about 1/4 cup of milk to each container, so that when I reheat in the microwave (for 1-2 min), I get an oatmeal like texture, otherwise the end result will be a bit drier than regular oatmeal.
