Blueberry Oatmeal Pancakes

Ingredients:

  1. 2 cups old fashioned rolled oats
  2. 1 tablespoon chia seeds (optional)
  3. 2 cups milk
  4. 1 cup flour (can substitute with GF flour)
  5. 2 teaspoons baking powder
  6. 1/2 teaspoon salt
  7. 2 eggs
  8. 2 tablespoons melted butter
  9. 2 tablespoons syrup
  10. 1 teaspoon vanilla
  11. 1 cup blueberries

Instructions:

  1. Add oats, chia seeds, and milk into a small bowl, and let soak for 10-15 minutes.
  2. While the oats soak, combine flour, baking powder and salt in a small bowl and mix to combine.
  3. Add eggs, butter, syrup, and vanilla into oat mix and stir gently until just combined.
  4. Stir the dry ingredients into the wet mixture and stir gently.
  5. Fold in the blueberries.
  6. Heat a skillet or griddle with a pad of butter. Then add 1/4 cup of pancake mix and repeat for all pancakes. Cook until bubbles appear, then flip carefully.
  7. To meal prep: let pancakes cool completely, then store in airtight container in the fridge for up to 4 days. Reheat in microwave for 30-45 seconds. Top with syrup, powdered sugar and more blueberries.
