Blueberry Oatmeal Pancakes

Ingredients:
- 2 cups old fashioned rolled oats
- 1 tablespoon chia seeds (optional)
- 2 cups milk
- 1 cup flour (can substitute with GF flour)
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 eggs
- 2 tablespoons melted butter
- 2 tablespoons syrup
- 1 teaspoon vanilla
- 1 cup blueberries
Instructions:
- Add oats, chia seeds, and milk into a small bowl, and let soak for 10-15 minutes.
- While the oats soak, combine flour, baking powder and salt in a small bowl and mix to combine.
- Add eggs, butter, syrup, and vanilla into oat mix and stir gently until just combined.
- Stir the dry ingredients into the wet mixture and stir gently.
- Fold in the blueberries.
- Heat a skillet or griddle with a pad of butter. Then add 1/4 cup of pancake mix and repeat for all pancakes. Cook until bubbles appear, then flip carefully.
- To meal prep: let pancakes cool completely, then store in airtight container in the fridge for up to 4 days. Reheat in microwave for 30-45 seconds. Top with syrup, powdered sugar and more blueberries.
