Breakfast Burritos

Ingredients:
- 10 eggs
- 5 tortillas
- Veggies (bell peppers, onions, spinach, mushrooms etc.)
- Ham, cheese, other add ins as desired
Instructions:
- Wash and chop veggies.
- Sauté veggies.
- Crack eggs into a bowl, add a splash of water or milk, and whisk until fluffy.
- Pour the eggs into a warm saucepan with melted butter. Cook eggs until soft.
- Once the eggs are cooked, add in sautéed veggies and other add ins.
- Lay out 5 tortillas, and spoon the egg mixture into each tortilla, evenly dividing it among the 5.
- Once filled, carefully roll up the burritos.
- To meal prep: allow burritos to cool, then wrap each one in a damp paper towel. Place in freezer sized ziplock. Keep in fridge 4-5 days. The reheat, place in microwave in damp paper towel for up to 1 minute until cooked through. Will keep in freezer for 1-2 months. Thaw overnight or microwave from frozen.
