Breakfast Sandwich

Ingredients:
- 4 english muffins/ bread of your choice
- 8 eggs
- Veggies as desired (bell peppers, onions, spinach, mushrooms etc.)
- Ham, cheese, other add-ins
Instructions:
- Preheat oven to 375 degrees, and grease a 8x8 dish.
- Wash and chop veggies and add-ins into bite sized pieces.
- Crack eggs into a bowl, add a splash of milk or water and whisk until fluffy.
- Add veggies and other add-ins into eggs mix. Pour into prepared dish.
- Bake in preheated oven for 25 minutes or until eggs are cooked through.
- To meal prep: let eggs cool, then assemble sandwiches. Cut egg bake into 4 equal squares, and place a square on each half of an english muffin. Top with a slice of cheese if desired. Top with other half of english muffin. Wrap in a damp paper towel and keep in fridge in airtight container for up to 4 days. Microwave for 30 seconds when ready to eat. Keeps in freezer for up to 2 months, thaw overnight and microwave until warm.
