Breakfast Sandwich

Ingredients:

  1. 4 english muffins/ bread of your choice
  2. 8 eggs
  3. Veggies as desired (bell peppers, onions, spinach, mushrooms etc.)
  4. Ham, cheese, other add-ins

Instructions:

  1. Preheat oven to 375 degrees, and grease a 8x8 dish.
  2. Wash and chop veggies and add-ins into bite sized pieces.
  3. Crack eggs into a bowl, add a splash of milk or water and whisk until fluffy.
  4. Add veggies and other add-ins into eggs mix. Pour into prepared dish.
  5. Bake in preheated oven for 25 minutes or until eggs are cooked through.
  6. To meal prep: let eggs cool, then assemble sandwiches. Cut egg bake into 4 equal squares, and place a square on each half of an english muffin. Top with a slice of cheese if desired. Top with other half of english muffin. Wrap in a damp paper towel and keep in fridge in airtight container for up to 4 days. Microwave for 30 seconds when ready to eat. Keeps in freezer for up to 2 months, thaw overnight and microwave until warm.
