Burrito Bowls

Burrito Bowls

Prep time: 10 minutes Cooking time: 20 minutes Total time: 30 minutes

Ingredients:

  1. 1 can black beans
  2. 1 can pinto beans
  3. 1 can corn
  4. 2 bell peppers
  5. 1 yellow onion
  6. 2 cups rice
  7. Toppings as desired (guacamole, sour cream, salsa, cheese, etc.)

Instructions:

  1. Preheat oven to 400 degrees.
  2. Cook rice.
  3. Line a baking sheet with tinfoil, then drizzle with olive oil.
  4. Wash and cut veggies into slices.
  5. Layer veggies onto prepared sheet tray and season (I like to use salt, pepper, garlic powder, onion powder, chili powder, paprika, and parsley.)
  6. Roast veggies for 20-25 minutes.
  7. Drain and rinse both cans of beans.
  8. Assemble burrito bowl.
  9. To meal prep: Divide rice equally into 5 containers. Then add a spoonful of veggies to each container, followed by the beans. Reheat in the microwave, then add any topping and enjoy!
