Burrito Bowls

Prep time: 10 minutes Cooking time: 20 minutes Total time: 30 minutes
Ingredients:
- 1 can black beans
- 1 can pinto beans
- 1 can corn
- 2 bell peppers
- 1 yellow onion
- 2 cups rice
- Toppings as desired (guacamole, sour cream, salsa, cheese, etc.)
Instructions:
- Preheat oven to 400 degrees.
- Cook rice.
- Line a baking sheet with tinfoil, then drizzle with olive oil.
- Wash and cut veggies into slices.
- Layer veggies onto prepared sheet tray and season (I like to use salt, pepper, garlic powder, onion powder, chili powder, paprika, and parsley.)
- Roast veggies for 20-25 minutes.
- Drain and rinse both cans of beans.
- Assemble burrito bowl.
- To meal prep: Divide rice equally into 5 containers. Then add a spoonful of veggies to each container, followed by the beans. Reheat in the microwave, then add any topping and enjoy!
