Burritos

Prep time: 10 minutes Cooking time: 20 minutes Total time: 30 minutes

Ingredients:

  1. 5 tortillas
  2. 1 can black beans
  3. 1 can pinto beans
  4. 1 can corn
  5. 2 bell peppers
  6. 1 yellow onion
  7. 1.5 cups rice
  8. 3 cups water (for rice)
  9. fillings as desired (guacamole, sour cream, lettuce, salsa, cheese etc.)

Instructions:

  1. Preheat oven to 400 degrees.
  2. Cook rice.
  3. Wash and cut veggies into strips.
  4. Cover a baking sheet in tinfoil and drizzle with olive oil.
  5. Lay peppers, onions, and corn over tinfoil. Sprinkle with seasonings of your choice (I like salt, pepper, garlic powder, onion powder, chili powder, paprika).
  6. Roast veggies in preheated oven for 20-25 minutes.
  7. Assemble burrito!
  8. To meal prep: I keep all of the components I want warm (beans, veggies) in one meal prep container so I can pop it in the microwave when I'm ready to eat. I leave the cold parts in whatever they came in, then assemble when ready to enjoy.
