Burritos

Prep time: 10 minutes Cooking time: 20 minutes Total time: 30 minutes
Ingredients:
- 5 tortillas
- 1 can black beans
- 1 can pinto beans
- 1 can corn
- 2 bell peppers
- 1 yellow onion
- 1.5 cups rice
- 3 cups water (for rice)
- fillings as desired (guacamole, sour cream, lettuce, salsa, cheese etc.)
Instructions:
- Preheat oven to 400 degrees.
- Cook rice.
- Wash and cut veggies into strips.
- Cover a baking sheet in tinfoil and drizzle with olive oil.
- Lay peppers, onions, and corn over tinfoil. Sprinkle with seasonings of your choice (I like salt, pepper, garlic powder, onion powder, chili powder, paprika).
- Roast veggies in preheated oven for 20-25 minutes.
- Assemble burrito!
- To meal prep: I keep all of the components I want warm (beans, veggies) in one meal prep container so I can pop it in the microwave when I'm ready to eat. I leave the cold parts in whatever they came in, then assemble when ready to enjoy.
