Chickenless Noodle Soup

Prep time: 5 minutes Cook time: 25 minutes Total time: 30 minutes

Ingredients:

  1. 4-5 carrots
  2. 3-4 stalks of celery
  3. 1 yellow onion
  4. 6 cup vegetable broth
  5. seasonings (I use salt, pepper, garlic powder, onion powder, rosemary and thyme)
  6. 1/2 box pasta of your choosing (i like medium shells!)

Instructions:

  1. Wash and chop your carrots, celery and onions into small pieces, and add into a large pot set over medium heat along with 1 tablespoon of cooking oil.
  2. Let the veggies cook, stirring occasionally, until they are softened. Should take about 10 min.
  3. Then add in your seasonings and broth.
  4. Next, add in your pasta. If your pasta isn't submerged in the liquid, add in more broth (or water), until all the pasta is covered.
  5. Bring the pot to a simmer and cook for about 10 minutes or until the pasta is tender.
  6. Enjoy!
  7. To meal prep: portion out into 4-5 containers. Let cool completely. Then add the lids and store in the fridge up to 5 days. Reheat in the microwave for about 2 minutes when ready to eat.
