Chickenless Noodle Soup
Prep time: 5 minutes Cook time: 25 minutes Total time: 30 minutes
Ingredients:
- 4-5 carrots
- 3-4 stalks of celery
- 1 yellow onion
- 6 cup vegetable broth
- seasonings (I use salt, pepper, garlic powder, onion powder, rosemary and thyme)
- 1/2 box pasta of your choosing (i like medium shells!)
Instructions:
- Wash and chop your carrots, celery and onions into small pieces, and add into a large pot set over medium heat along with 1 tablespoon of cooking oil.
- Let the veggies cook, stirring occasionally, until they are softened. Should take about 10 min.
- Then add in your seasonings and broth.
- Next, add in your pasta. If your pasta isn't submerged in the liquid, add in more broth (or water), until all the pasta is covered.
- Bring the pot to a simmer and cook for about 10 minutes or until the pasta is tender.
- Enjoy!
- To meal prep: portion out into 4-5 containers. Let cool completely. Then add the lids and store in the fridge up to 5 days. Reheat in the microwave for about 2 minutes when ready to eat.
