Egg Noodle Veggie Casserole

Prep time: 15 minutes Cooking time: 20 minutes Total time: 35 minutes

Ingredients:

  1. 1 package of egg noodles
  2. 1 can cream of mushroom soup
  3. 1/2 cup milk
  4. 1 package of frozen corn, peas, carrots

Instructions:

  1. Preheat oven to 350 degrees and grease a 9x13 baking dish.
  2. Cook pasta according to package instructions.
  3. In a large bowl, combine the drained pasta, milk, cream of mushroom, and frozen veggies, along with any seasonings you want (salt pepper garlic powder, and parsley are my go-tos). Pour mix into baking dish.
  4. Bake for 20 minutes, until veggies are warmed through.
  5. To meal prep: Let the casserole cool completely. Then portion out into meal prep containers. Store in fridge for up to 5 days. Reheat in microwave.
