Enchiladas

Enchiladas

Prep time: 20 min Cooking time: 25 min Total time: 45 min

Ingredients:

  1. tortillas
  2. black and/ or refried beans
  3. mexican cheese
  4. any fillings as desired: I like peppers, onions, other veggies
  5. 1 can of red or green enchilada sauce

Instructions:

  1. Preheat oven to 375 degrees.
  2. Chop and sauté veggies, season as desired.
  3. Assemble enchiladas by placing a scoop of filling into a tortilla and wrapping it up tightly, and placing seam side down in a casserole dish.
  4. Lightly spray the filled tortillas with cooking oil, and cover the dish with tinfoil.
  5. Bake the enchiladas for 10 minutes.
  6. Remove from oven and cover with enchilada sauce, then bake for another 10 minutes.
  7. Remove from oven and sprinkle the tops of the tortillas with cheese, then bake for 5 more minutes or until cheese is melted.
  8. For meal prep: let the casserole cool completely, then divide into meal prep containers. Reheat in the microwave.
