Enchiladas

Prep time: 20 min Cooking time: 25 min Total time: 45 min
Ingredients:
- tortillas
- black and/ or refried beans
- mexican cheese
- any fillings as desired: I like peppers, onions, other veggies
- 1 can of red or green enchilada sauce
Instructions:
- Preheat oven to 375 degrees.
- Chop and sauté veggies, season as desired.
- Assemble enchiladas by placing a scoop of filling into a tortilla and wrapping it up tightly, and placing seam side down in a casserole dish.
- Lightly spray the filled tortillas with cooking oil, and cover the dish with tinfoil.
- Bake the enchiladas for 10 minutes.
- Remove from oven and cover with enchilada sauce, then bake for another 10 minutes.
- Remove from oven and sprinkle the tops of the tortillas with cheese, then bake for 5 more minutes or until cheese is melted.
- For meal prep: let the casserole cool completely, then divide into meal prep containers. Reheat in the microwave.
