Fried Tofu Sandwich

Ingredients:

  1. 1 block of extra firm tofu
  2. 1/2 cup flour
  3. 2 tablespoons cornstarch
  4. 1/4 cup hot sauce
  5. 1/4 cup mustard
  6. 4 rolls
  7. mayo
  8. lettuce
  9. dill pickle chips

Instructions:

  1. Press tofu to remove as much liquid as possible. Then freeze for at least 4 hours. Let thaw overnight. Press again to dry completely.
  2. Add vegetable oil (any neutral oil works) to a small pot until it is 1 inch deep. Turn onto medium heat.
  3. In one small bowl, combine flour and cornstarch. In a separate bowl, combine hot sauce and mustard.
  4. Cover each tofu piece in the flour mix, then the hot sauce mix, then the flour mix again. Place carefully into hot oil.
  5. Let each tofu piece cook for 3-4 minutes, then flip and cook for another 3-4 minutes. They should get golden brown and crispy.
  6. Dry on a paper towel or cooling rack.
  7. To assemble sandwich, slather the top bun with mayo (and extra hot sauce if you want), layer some greens onto the bottom bun, followed by the tofu and a few pickles, then add the top bun.
  8. To meal prep: store cooled tofu pieces in an airtight container in the fridge for up to 4 days. They are best reheated in the air fryer to maintain the crisp. The can also been frozen for up to a month, and air fried to reheat.
