Fried Tofu Sandwich

Ingredients:
- 1 block of extra firm tofu
- 1/2 cup flour
- 2 tablespoons cornstarch
- 1/4 cup hot sauce
- 1/4 cup mustard
- 4 rolls
- mayo
- lettuce
- dill pickle chips
Instructions:
- Press tofu to remove as much liquid as possible. Then freeze for at least 4 hours. Let thaw overnight. Press again to dry completely.
- Add vegetable oil (any neutral oil works) to a small pot until it is 1 inch deep. Turn onto medium heat.
- In one small bowl, combine flour and cornstarch. In a separate bowl, combine hot sauce and mustard.
- Cover each tofu piece in the flour mix, then the hot sauce mix, then the flour mix again. Place carefully into hot oil.
- Let each tofu piece cook for 3-4 minutes, then flip and cook for another 3-4 minutes. They should get golden brown and crispy.
- Dry on a paper towel or cooling rack.
- To assemble sandwich, slather the top bun with mayo (and extra hot sauce if you want), layer some greens onto the bottom bun, followed by the tofu and a few pickles, then add the top bun.
- To meal prep: store cooled tofu pieces in an airtight container in the fridge for up to 4 days. They are best reheated in the air fryer to maintain the crisp. The can also been frozen for up to a month, and air fried to reheat.
