Mediterranean Inspired Bowl

Ingredients
- 1 1/4 cup quinoa
- 1 can chickpeas
- 1 long english cucumber
- 1 package grape tomatoes
- 5 eggs
- 1 red onion
Instructions
- Preheat oven to 400 degrees.
- Drain and rinse chickpeas, then layer onto a baking sheet lined with tinfoil and drizzled with olive oil. Top with seasonings (I like to use salt, pepper, garlic powder, and parsley).
- Boil eggs.
- Cook quinoa according to package instructions
- Wash and chop all veggies into bite sized pieces. (You can keep the tomatoes whole)
- Assemble!
- To meal prep: Let all components cool, then add to a meal prep container. Keep in fridge for up to 5 days. Enjoy straight from the fridge!
