Quick Bulk Oven Quesadillas

Prep time: 15 minutes Cook time: 15 minutes Total time: 30 minutes

Ingredients:

  1. 4 Tortillas
  2. 1/2 yellow onion, diced
  3. 1 can black beans, drained and rinsed
  4. 1 can corn, drained and rinse
  5. Spices
  6. Cheese of your choice (a melty cheese is best, extra meltiness if you shred your own cheese! I like using a combo of monterrey jack and sharp cheddar)

Instructions:

  1. Preheat the oven to 375 degrees.
  2. In a medium pot, add 1 tablespoon of olive oil. Once hot, add in the diced onion. Once translucent, add in the can of drained and rinsed black beans along with 1/2 cup of water.
  3. When the beans are done, add in the drained and rinsed corn. Season! (I like salt, pepper, garlic powder, onion powder, paprika, chili powder)
  4. Lay out your 4 tortillas and assemble. Place a handful of cheese on half of each of the tortilla. Then layer on 1/4 of the bean/ corn mixture on top of the cheese. Put another handful of cheese over the beans and corn.
  5. Spray the tops of the tortillas with PAM.
  6. Bake for 15- 20 minutes or until slightly crispy and golden brown.
  7. To meal prep: Let cool completely on a cooling rack. Cut into slices. Layer the slices in a container between sheets of parchment paper. To reheat, microwave for 1-2 minutes or airfry for max crispiness!
