Quick Bulk Oven Quesadillas

Prep time: 15 minutes Cook time: 15 minutes Total time: 30 minutes
Ingredients:
- 4 Tortillas
- 1/2 yellow onion, diced
- 1 can black beans, drained and rinsed
- 1 can corn, drained and rinse
- Spices
- Cheese of your choice (a melty cheese is best, extra meltiness if you shred your own cheese! I like using a combo of monterrey jack and sharp cheddar)
Instructions:
- Preheat the oven to 375 degrees.
- In a medium pot, add 1 tablespoon of olive oil. Once hot, add in the diced onion. Once translucent, add in the can of drained and rinsed black beans along with 1/2 cup of water.
- When the beans are done, add in the drained and rinsed corn. Season! (I like salt, pepper, garlic powder, onion powder, paprika, chili powder)
- Lay out your 4 tortillas and assemble. Place a handful of cheese on half of each of the tortilla. Then layer on 1/4 of the bean/ corn mixture on top of the cheese. Put another handful of cheese over the beans and corn.
- Spray the tops of the tortillas with PAM.
- Bake for 15- 20 minutes or until slightly crispy and golden brown.
- To meal prep: Let cool completely on a cooling rack. Cut into slices. Layer the slices in a container between sheets of parchment paper. To reheat, microwave for 1-2 minutes or airfry for max crispiness!
