Salmon Patties

Prep time: 20 minutes Cooking time: 20 minutes Total time: 45 minutes

Ingredients:

  1. 1 can salmon
  2. 1/4 cup quinoa
  3. 1/2 cup water
  4. 1 egg
  5. 1/4 cup breadcrumbs

For potato salad:

  1. 4-5 red potatoes
  2. 2 stalks celery
  3. 4 hard boiled eggs
  4. 1 red onion
  5. 1/2 cup mayo
  6. 2 tablespoons mustard

For roasted broccoli

  1. 1-2 heads broccoli

Instructions:

Salmon patties

  1. Cook quinoa according to instructions.
  2. Once cooled, add quinoa to a medium sized bowl, followed by salmon, an egg, and breadcrumbs. Stir to combine.
  3. Let chill in fridge for at least 30 minutes. (work on potato salad and broccoli!)
  4. Drizzle a large pan with oil and let heat on the stove.
  5. Use your hands to form small patties and place gently onto hot pan.
  6. Let patties cook for 3-4 minutes on each side.

Potato salad

  1. While the salmon mixture is chilling, wash, peel, and chop potatoes into small chunks.
  2. Boil potatoes for 15 minutes.
  3. Let cool.
  4. Then add mayo, mustard, diced hardboiled egg, celery, red onion, salt, pepper, and dill.

Roasted broccoli

  1. Preheat oven to 425 degrees.
  2. Line a baking sheet with tinfoil and olive oil.
  3. Wash broccoli and chop into small florets.
  4. Toss with olive oil, salt and pepper, then spread on prepared baking dish.
  5. Roast for 20 minutes.

To meal prep: Let all components cool, then evenly divide each one into 5 containers as seen above. I eat this cold straight from the fridge, perfect on a hot day!
