Southwest Inspired Pasta Salad

Prep time: 25 min Cook time: 20 min Total time: 30 min

Ingredients:

  1. Pasta of your choice (I like rotini in this recipe, half a box makes 4-5 servings)
  2. 1 can of black beans
  3. 1 can of corn
  4. Cherry tomatoes
  5. 1 bell pepper (I like to use red)
  6. 2 heads of romaine lettuce
  7. Dressing (see my cilantro lime avocado dressing recipe!)

Instructions

  1. Cook pasta according to pasta instructions.
  2. While the pasta cooks, wash and chop the tomatoes, bell pepper and romaine.
  3. Drain the beans, and heat in a skillet for 10-15 min on med heat. Season as desired for extra flavor.
  4. Drain the corn, and heat in a skillet for about 10 min on med heat. Season as desired for extra flavor.
  5. Combine all ingredients and enjoy! (Top with fresh cilantro for and extra flavor boost)
  6. To meal prep: Combine all ingredients, except the lettuce and dressing, and portion into 4-5 containers. Store lettuce and dressing separately, and add to your pasta bowls when ready to eat.
