Southwest Inspired Pasta Salad
Prep time: 25 min Cook time: 20 min Total time: 30 min
Ingredients:
- Pasta of your choice (I like rotini in this recipe, half a box makes 4-5 servings)
- 1 can of black beans
- 1 can of corn
- Cherry tomatoes
- 1 bell pepper (I like to use red)
- 2 heads of romaine lettuce
- Dressing (see my cilantro lime avocado dressing recipe!)
Instructions
- Cook pasta according to pasta instructions.
- While the pasta cooks, wash and chop the tomatoes, bell pepper and romaine.
- Drain the beans, and heat in a skillet for 10-15 min on med heat. Season as desired for extra flavor.
- Drain the corn, and heat in a skillet for about 10 min on med heat. Season as desired for extra flavor.
- Combine all ingredients and enjoy! (Top with fresh cilantro for and extra flavor boost)
- To meal prep: Combine all ingredients, except the lettuce and dressing, and portion into 4-5 containers. Store lettuce and dressing separately, and add to your pasta bowls when ready to eat.
