Southwest Salad

Prep time: 15 minutes Cooking time: 0 minutes Total time: 15 minutes

Ingredients:

  1. 3 heads romaine lettuce
  2. 1 red bell pepper
  3. 1 red onion
  4. 1 can black beans
  5. 1 can corn
  6. 1/2 cup quinoa
  7. Dressing (I like ranch with this)
  8. Crunchy topping (crushed tortilla chips, plantain chips etc.)

Instructions:

  1. Cook quinoa according to package instructions.
  2. Wash and dry all veggies.
  3. Cut each romaine head, bell pepper, and onion into bite sized pieces.
  4. Drain and rinse black beans and corn.
  5. Assemble!
  6. To meal prep: Layer each container with lettuce, then quinoa, then veggies and beans. Keep the dressing and toppings separate, then add when ready to enjoy!
