Southwest Salad

Prep time: 15 minutes Cooking time: 0 minutes Total time: 15 minutes
Ingredients:
- 3 heads romaine lettuce
- 1 red bell pepper
- 1 red onion
- 1 can black beans
- 1 can corn
- 1/2 cup quinoa
- Dressing (I like ranch with this)
- Crunchy topping (crushed tortilla chips, plantain chips etc.)
Instructions:
- Cook quinoa according to package instructions.
- Wash and dry all veggies.
- Cut each romaine head, bell pepper, and onion into bite sized pieces.
- Drain and rinse black beans and corn.
- Assemble!
- To meal prep: Layer each container with lettuce, then quinoa, then veggies and beans. Keep the dressing and toppings separate, then add when ready to enjoy!
