Spaghetti Stir Fry

Prep time: 10 minutes Cooking time: 15 minutes Total time: 25 minutes
Ingredients:
- 1 box spaghetti
- 1 red bell pepper
- 1 yellow onion
- 2 large carrots, peeled
- 1 cup baby bella mushrooms
- any protein you want (I like tofu, but chicken, shrimp etc will work)
For the sauce
- 1/2 cup soy sauce
- 1 cup veggie stock
- 1 tablespoon brown sugar
- 1 teaspoon sugar
- 2 tablespoons cornstarch
Instructions:
- Cook spaghetti according to pasta instructions.
- Wash and dice veggies into long strips to mimic a spaghetti noodle shape.
- Heat a large pan with a drizzle of olive oil. Add cut veggies to the hot oil. Sauté for 10-12 minutes, stirring occasionally and adding more oil as needed.
- While the veggies are cooking, make up the sauce. Add all ingredients to a small pot and bring to a light boil. Then reduce the heat and stir frequently.
- When the sauce is thick, pour half over the veggies.
- To meal prep: let all components cool completely. Then divide pasta equally into 5 meal prep containers. Add a spoonful of veggies to each container. Use the rest of the sauce to top each serving. Reheat in microwave when ready to enjoy.
