Spaghetti Stir Fry

Prep time: 10 minutes Cooking time: 15 minutes Total time: 25 minutes

Ingredients:

  1. 1 box spaghetti
  2. 1 red bell pepper
  3. 1 yellow onion
  4. 2 large carrots, peeled
  5. 1 cup baby bella mushrooms
  6. any protein you want (I like tofu, but chicken, shrimp etc will work)

For the sauce

  1. 1/2 cup soy sauce
  2. 1 cup veggie stock
  3. 1 tablespoon brown sugar
  4. 1 teaspoon sugar
  5. 2 tablespoons cornstarch

Instructions:

  1. Cook spaghetti according to pasta instructions.
  2. Wash and dice veggies into long strips to mimic a spaghetti noodle shape.
  3. Heat a large pan with a drizzle of olive oil. Add cut veggies to the hot oil. Sauté for 10-12 minutes, stirring occasionally and adding more oil as needed.
  4. While the veggies are cooking, make up the sauce. Add all ingredients to a small pot and bring to a light boil. Then reduce the heat and stir frequently.
  5. When the sauce is thick, pour half over the veggies.
  6. To meal prep: let all components cool completely. Then divide pasta equally into 5 meal prep containers. Add a spoonful of veggies to each container. Use the rest of the sauce to top each serving. Reheat in microwave when ready to enjoy.
