Sweet Potato Sloppy Joes

Ingredients:
- 2 sweet potatoes
- 1/2 cup lentils
- 3/4 cup BBQ sauce
- Hamburger buns
- Coleslaw
Instructions:
- Cook lentils according to package instructions.
- Wash and peel the sweet potatoes.
- Shred sweet potatoes using a grater.
- Drizzle olive oil in a saucepan and set to medium heat, then add the sweet potato.
- Sauté the sweet potato for 15 minutes or until softened, stirring occasionally.
- When the sweet potato is done, add the lentils and BBQ sauce into the pan.
- Scoop some sloppy joe mixture onto a bun, top with coleslaw, and enjoy!
- To meal prep: store the sloppy joe mix and coleslaw in separate containers. Assemble sandwich when ready to eat.
