Taco Pasta

Ingredients
- 1 package pasta of your choice
- 1 bell pepper
- 1 yellow onion
- 1 can black beans
- 1 can corn
- 1 can diced tomatoes with green chilis
- 3 tablespoons butter
- 2 tablespoons flour
- 1/2 cup milk
- 1 cup shredded cheese (any! you can even combine types)
Instructions
- Cook pasta according to package instructions.
- Drain and rinse beans, corn, and tomatoes.
- Wash and chop veggies into bite sized pieces.
- Heat a large skillet with a drizzle of olive oil, then add chopped bell pepper and onion. Sauté.
- Drain pasta and set aside in separate bowl.
- In pasta pot, melt the butter, then add flour. Stir to combine.
- Add the milk, stirring frequently until mixture starts to thicken. Then add seasonings as desired (I like salt, pepper, garlic powder, chili powder, and paprika).
- Add the shredded cheese to the pot, and stir until cheese is melted.
- Add pasta back into the pot, along with the sautéed veggies, beans, corn, and diced tomatoes.
- To meal prep: Evenly divide the pasta into 5 meal prep containers. Keep in the fridge for up to 5 days. Reheat in microwave when ready to enjoy.
