Taco Pasta

Ingredients

  1. 1 package pasta of your choice
  2. 1 bell pepper
  3. 1 yellow onion
  4. 1 can black beans
  5. 1 can corn
  6. 1 can diced tomatoes with green chilis
  7. 3 tablespoons butter
  8. 2 tablespoons flour
  9. 1/2 cup milk
  10. 1 cup shredded cheese (any! you can even combine types)

Instructions

  1. Cook pasta according to package instructions.
  2. Drain and rinse beans, corn, and tomatoes.
  3. Wash and chop veggies into bite sized pieces.
  4. Heat a large skillet with a drizzle of olive oil, then add chopped bell pepper and onion. Sauté.
  5. Drain pasta and set aside in separate bowl.
  6. In pasta pot, melt the butter, then add flour. Stir to combine.
  7. Add the milk, stirring frequently until mixture starts to thicken. Then add seasonings as desired (I like salt, pepper, garlic powder, chili powder, and paprika).
  8. Add the shredded cheese to the pot, and stir until cheese is melted.
  9. Add pasta back into the pot, along with the sautéed veggies, beans, corn, and diced tomatoes.
  10. To meal prep: Evenly divide the pasta into 5 meal prep containers. Keep in the fridge for up to 5 days. Reheat in microwave when ready to enjoy.
