Vegetarian Buffalo Wraps

Prep time: 5 minutes Cooking time: 20 minutes Total time: 25 minutes

Ingredients:

  1. 1 can drained and rinsed chickpeas
  2. 1 head of cauliflower
  3. 1 tablespoon hot sauce
  4. pinches of salt, pepper, parsley, paprika
  5. 1 head of romaine lettuce
  6. 5 wraps
  7. ranch dressing

Instructions:

  1. Preheat oven to 400 degrees and line a baking sheet with tinfoil.
  2. Wash and chop the cauliflower.
  3. Add chickpeas and cauliflower to a large bowl with the hot sauce and seasonings. Stir to combine, then place on baking sheet.
  4. Roast the cauliflower chickpea mixture for 20 minutes.
  5. Assemble wrap. Add a bed of lettuce to the wrap/ tortilla, followed by the chickpea and cauliflower mix, and top it off with some ranch dressing.
  6. To meal prep: I like to keep the roasted chickpeas and cauliflower in an airtight container in the fridge so I can pop it in the microwave when I'm ready to assemble a wrap!
