Vegetarian Buffalo Wraps

Ingredients:
- 1 can drained and rinsed chickpeas
- 1 head of cauliflower
- 1 tablespoon hot sauce
- pinches of salt, pepper, parsley, paprika
- 1 head of romaine lettuce
- 5 wraps
- ranch dressing
Instructions:
- Preheat oven to 400 degrees and line a baking sheet with tinfoil.
- Wash and chop the cauliflower.
- Add chickpeas and cauliflower to a large bowl with the hot sauce and seasonings. Stir to combine, then place on baking sheet.
- Roast the cauliflower chickpea mixture for 20 minutes.
- Assemble wrap. Add a bed of lettuce to the wrap/ tortilla, followed by the chickpea and cauliflower mix, and top it off with some ranch dressing.
- To meal prep: I like to keep the roasted chickpeas and cauliflower in an airtight container in the fridge so I can pop it in the microwave when I'm ready to assemble a wrap!
