Veggie Quesadillas

Ingredients:
- veggies! (I like to use onions, bell peppers, spinach etc.)
- beans (black beans, pinto, refried, take your pick)
- large tortilla
- shredded cheese (any kind!)
Instructions:
- Wash and chop veggies into slices.
- Heat a a tablespoon of olive oil in a medium- large pan, then add in your veggies.
- When the veggies are almost all the way soft, add in seasonings of your choosing, along with a serving size of beans. (salt, pepper, garlic powder, onion powder, paprika, chili powder, parsley)
- Move the veggies and beans onto a plate.
- Add a touch more oil to the pan, or use non-stick spray. Turn the heat to low and place your tortilla on the pan.
- After a minute or two, flip the tortilla to the other side. Then add about 1/4 cup of cheese to half of the tortilla, followed by all of the beans and veggies.
- Top the bean/ veggie mix with another 1/4 cup of cheese.
- Fold your tortilla over to make a half moon shape.
- Flip the tortilla to the other side so both sides can get a little crispy and the cheese can get melty.
- Remove from pan, onto a plate, let cool for a minute or two, then slice into thirds and enjoy! Can serve with sour cream, guacamole etc.
- To meal prep: Repeat the process until you have your desired amount of tortillas. Store in an airtight container with each quesadilla separated by parchment paper. Best way to re-heat is in the air fryer for a few minutes, but the microwave, stove, or oven will also work.
- For easier meal prep: Skip steps 5-10, and instead, after your veggies and beans are cooked, assemble your quesadillas, then throw into a 350 degree oven for about 15 minutes.
